Robert Lee began his professional culinary path after changing careers from the entertainment industry. Always having a passion for food and cooking, he decided it was time to take the leap. While attending culinary school, he began work with Patina and Pinot Bistro and upon graduation moved north to Carmel to work at Bouchee where he developed a basis for classical techniques. Upon returning to Los Angeles, Robert went to work at the newly opened AOC under Suzanne Goin and learned about seasonality and the importance of local farmers. Moving to New York. Robert found himself as part of the Opening team at Jean-Georges Vongerichten and Gray Kunz's collaboration, Spice Market. From there, he went to help open The Modern af the Museum of Modern Art under Gabriel Kreuther.

In searching for his own voice, Robert and his partners found a need for affordable breakfast and lunch that had the care and attention of fine dining. Believing great food comes from the use of the best resources Robert decided lo approach the world of breakfast and lunch with the mindset of a three star restaurant bringing the training and technique he has gained throughout his career.

Hayden Ramsey has spent nine years in the food service industry working in everything from a deli in Texas to a Patisserie in France. Her career highlights include being in the kitchen for a three star review in New York and being present for each arrival of fresh produce at Square One Dining.

After a brief stint in show business. Phil Fox spent nine years managing clubs and restaurants in the Fairfax delta and Mid-Wilshire areas.  At Square One, he likes to make coffee and say hello.
